Vegan Mac N Cheezy

I am a HUGE pasta fan but being gluten & lactose intolerant makes it difficult for me to indulge on things like Mac N Cheese - but that's probably for the best. It's quite challenging to find alternatives that aren't filled with garbage. I strive to be majority based. I feel incredible nourishing my body through plant sources. I've gotten quite creative with gluten free pasta alternatives. I'm a huge fan of Chickpea Pasta, Brown Rice Pasta, Red Lentil Pasta & Black Bean pasta - just to name a few. 

Not only is this recipe comforting - it's also incredibly nourishing! This Mac N Cheezy is packed with superfoods high in fibre, B vitamins (nutritional yeast) , protein AND anti-inflammatories & anti-oxidants (from the turmeric - we'll save that for another post).

Vegan Mac N Cheezy

  • pasta of choice - I used 2 1/2 cups (dried) Red Lentil today
  • 1 cup steamed Organic Butternut Squash (cubed)
  • 1/2 cup soaked Organic Cashews
  • 1 cup Organic Coconut Milk (unsweetened)
  • 1 tsp Organic Dijon Mustard
  • 1 tbsp Organic Fresh Lemon Juice
  • 1/4 cup Nutritional Yeast
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Cayenne Pepper
  • 1/2 tsp Organic Turmeric 
  • 1/4 tsp ground Nutmeg
  • Pink Himalayan Sea Salt & Cracked Black Pepper to taste
  • Optional Add-Ins: spinach, tomatoes, mushrooms, chicken, GF bread crumbs - endless options!

Instructions:

Cook pasta according to directions on package. While pasta is cooking combine your wet ingredients into a blender (food processor or pot to use an emulsion blender) & blend until smooth. Add in dry ingredients & blend until mixed in evenly . Transfer to a sauce pan and heat over the stove until desired temperature. Pour over pasta (combine add-ins if any) & enjoy! Serves 3.

*Tip: place pasta & sauce in an over safe dish & add breadcrumbs then bake until golden brown. Bon Appetit !
