Raw + Vegan Carrot Cake Doughnuts

So this year I didn't quite know what I wanted for my birthday. I mean winning the lotto wouldn't be terrible. As most of you know, I am not much a sweet tooth person but for some reason lately I have just really wanted to make my own doughnuts - obviously healthy, superfood, protein doughnuts. P.S I've only ever had about 5 in my entire life so why doughnuts? Maybe because they are bite size & you can literally make any kind your little heart desires.

Let's give a huge shout out to my amazing sister who bought me a doughnut pan for my birthday! I can be a bit of an eager beaver (A.K.A super painfully impatient) so of course I had to put it to good use right away & make my own birthday treat. Which was also inspired by living in a small town that has pretty much zero options for healthy or specific dietary requirements for desserts ( or any food really ).  

First doughnut flavour - Carrot Cake. Have you ever heard of Sarah's Day? She is known as Youtube's Holistic Health Princess. I absolutely adore her. During the beginning of her youtube/instagram days there was this health food store/cafe that she would go to that had amazing healthy desserts. I seriously dream about the Carrot Cake from that cafe shown in her vlogs. I just had to have it - salivating already... Off to the kitchen to create a fool proof recipe.

Raw + Vegan Carrot Cake Doughnut

Base:

  • 1.5  cups grated Organic Carrots
  • 3/4 cup Organic Dates *remove the pits*
  • 1 cup soaked Organic Walnuts
  • 1/2 cup unsweetened Organic Coconut Flakes
  • 1/4 cup Organic Virgin Coconut Oil - melted
  • 1/3 cup Organic Coconut Flour
  • 1 tsp Organic Cinnamon (I probably put close to a tbsp - love cinnamon!)
  • 1/2 tsp Organic Ginger Powder

Icing:

  • 1/2 cup soaked Organic Cashews
  • 4 tbsp Organic Coconut Cream
  • 2 tbsp Organic Coconut Oil - melted
  • 1 tbsp Organic Maple Syrup

Blend base ingredients in a food processor (could use a blender). Place in desired pan (line with parchment), cupcake pan with liners or the star of the show the doughnut pan (no oil or paper required). place in freezer to firm while making the icing.

Place icing ingredients into a food processor & blend on high until it's a smooth, silky texture. Spread the icing over the base & dress it up with delicious toppings - walnuts, rose petals, lemon zest, caramel drizzle, etc....

*Nut Tip - soak minimum 3 hours prior to use, over night is best. If time is an issue soak nuts in hot water for 20-30minutes.
